Alu Palak Recipe
Ingredients
- 1 med packet of baby spinach
- 1 bunch of Methi leaves
- 1 Med Onion
- 1 tbsp Jeera seeds
- 1/2 tbsp Garlic paste
- 2 green chillis
- 1 Med Tomato
- 1/2 tbsp Jeera Powder
- 1/2 tbsp Coriander Powder
- 1/2 tbsp fresh lime juice
- 1 tbsp Garam Masala
- 2 Med Boiled and Halved Potatoes
Method
- In a container, add oil and ingredients 1-9
- Allow the greens to cook through
- Transfer to a blender adding little water if required
- In a fresh container, add Jeera seeds, and blended mixture
- Add the boiled potatoes
- Add Jeera and Coriander powder
- Add lime juice and Garam Masala
- Cover and cook on low for 3-4 mins to allow potatoes and greens to mix well
- Serve with Rotis or Rice
